Raw cucumber (with peel) of a 100 gram serving is 95% water, provides 16 calories and supplies low content of essential nutrients, as it is notable only for vitamin K at 16% of the Daily Value. The human olfactory response to cucumbers appear to vary. Most people report a mild, almost watery flavor or a light melon taste, while others sense a bitter taste with perfume qualities, attributable to the chemical compound, cucurbitacin.
Cucumber contains sugar, glycosides, amino acids, vitamin A, vitamin B2, vitamin C, calcium, phosphorus, iron and other ingredients.
